How the grade is calculated

Transparent math. Citable sources.

The NZR Event Impact Calculator measures only what NZR directly controls — catering operations. Guest travel and venue energy aren't included, because NZR doesn't operate those. The math compares your catering footprint to the average American wedding for the same guest count.

01
Baseline: the average American wedding
400–600 pounds of landfill waste and ~63 tons of CO₂ per wedding1, with 10% of food typically thrown away2. Beef in the conventional supply chain takes ~1,800 gallons of water per pound3.
02
Menu factor
Beef-heavy menus (Asado, Estancia) carry the highest food-carbon footprint; lamb (Shepherd's Lamb), pork (Polk's Folly), and vegetable-forward menus run lower. NZR's regenerative sourcing cuts food-carbon ~50% vs. industrial feedlot supply chains.
03
Venue distance
Travel from NZR's Taos kitchen to your venue. Closer = lower food-mile carbon. Taos / Angel Fire = base. Santa Fe ≈ 70 mi. Albuquerque ≈ 135 mi.
04
Waste diversion
NZR's biodegradable serviceware plus Reunity Resources composting partnership diverts an estimated 80% of typical wedding waste from landfill4.
05
The NZR Impact Score (out of 100)
A single number blending five sustainability dimensions: carbon reduction (40%) · waste diversion (25%) · water savings (15%) · local sourcing (10%) · biodegradable serviceware (10%). Most NZR events score in the 75–95 range — the higher the score, the lower the total impact.
06
How to push the savings higher
Three levers move the percentage (and the Score) up: (1) a vegetable-forward or regenerative-lamb menu (lighter food-carbon than heavy beef); (2) hosting at a venue closer to NZR's Taos kitchen (less food-mile transport); (3) right-sizing the guest count to your actual RSVPs (avoiding over-ordering food).

  4. Net Zero Ranch internal estimate based on operational practice. Standard wedding waste streams ≈ 50% disposable serviceware + 30% food waste + 20% packaging/decor. NZR's compostable serviceware and Reunity Resources partnership divert the first two streams.
