The calculator measures only what we directly control — catering. Guest travel and venue energy sit outside it, because they sit outside our hands. Your footprint is weighed against the average American wedding at the same guest count.

Baseline: the average American wedding
Four hundred to six hundred pounds of landfill waste and roughly sixty-three tons of CO₂ per wedding1, with a tenth of the food typically thrown away2. Conventional beef alone draws about 1,800 gallons of water per pound3.

The menu
Beef-forward menus — the Asado, a beef-led Charro — carry the heaviest food-carbon; lamb, pork, and vegetable-forward menus run lighter. Our regenerative sourcing cuts food-carbon by roughly half against industrial feedlot supply chains.

The destination
The distance from our Taos kitchen to your venue. Closer means fewer food miles. The Taos Valley is home base; Greater Santa Fe sits near seventy miles out.

Waste diversion
Our compostable Tabletop and composting divert nearly all of a typical wedding's waste from landfill — in practice, an entire NZR wedding sends just a few pounds, often under five4.

The NZR Impact Score
A single number blending five dimensions: carbon reduction at forty percent, waste diversion at twenty-five, water savings at fifteen, local sourcing at ten, and a compostable tabletop at ten. Most of our events land between seventy-five and ninety-five — the higher the score, the lighter the event.

Carbon returned to the soil
A gift the score never counts: regenerative land doesn't only emit less carbon, it draws carbon down and holds it underground — an estimated one to three tons per acre each year5. The sourcing behind your menu helps put carbon back where it belongs.

Where the savings grow
Three levers lift the number: a vegetable-forward or regenerative-lamb menu over heavy beef; a venue nearer our Taos kitchen; and, above all, right-sizing the guest count. A gathering under one hundred twenty-five to one hundred fifty can approach carbon-neutral; two to three hundred simply cannot, however thoughtfully it is sourced. Smaller is greener.
