Set Experiences

Two ranch feasts, and a chef in residence.

Each experience is a set menu with a base price you build on — sized to your guest count and shaped by the season. Add stations and courses as you like; travel, gratuity, and New Mexico gross-receipts tax are each their own line at invoicing.

The Charro

A ranch feast in the horseback Charro tradition of Jalisco. The centerpiece — local, regeneratively raised, grass-fed meat — is wood-smoked eighteen hours off site by our partner and delivered hot; a captain and attendants set, tend, and run the buffet through the night. Everything comes on compostable plates and palm-leaf platters — composted after, nothing left behind on your grounds.

The Asado

Our fullest expression of the ranch — the open-flame Asado of Argentina and Uruguay, cooked live on site over wood fire. Three chefs work the event, a live-fire grill chef among them at the coals, while a captain leads the room and dinner arrives family-style, passed hand to hand.

A centerpiece cooked live over wood fire, heirloom beans and rice, seasonal salads, and house salsas, family-style — with passed appetizers and a dessert station offered to complete your table. The full Asado menu, its add-ons, and substitutions arrive when you inquire.

Enhancement stations.

Round out any ranch feast with fully styled stations — table, linens, flatware, glasses, compostable serviceware or our partner rental packages, setup and breakdown, all handled by our crew. Composting is available on any event, anywhere.

Appetizer Station

Passed and stationed appetizers, styled and served on compostable serviceware or our partner rental packages, with bamboo utensils.

Dessert Station

A house-made assortment of wedding and special-event cakes, cut and served on compostable serviceware or our partner rental packages, with palm-leaf platters.

Soft Bar + Bartender

Table, linen, ice, biodegradable wine and beer cups, and every bar accessory, with a licensed bartender. You provide the beverages.

Hydration Station

Chilled infused waters, stationed or poured tableside to suit your service — with biodegradable napkins, table, and linen, set and cleared.

Live-Fire Argentine Grill + Grill Chef

Bring a true Asado to your feast. Our grill chef sets the traditional wood-fired Argentine grills and cooks over open flame on site, fired with NZR oak from our own ranch.

Stations are sized for up to 150 guests; larger celebrations are easily accommodated.

For families, retreats, and small groups who want a chef of their own — seasonal, market-driven menus sourced across Northern New Mexico. Multi-day formats, twelve to twenty-five guests, priced after a consultation.
